WEIGHTWATCHERS BACON AND PEA RISOTTO

Serves 4


2 Vegetable Stock Cubes (2 Pints)
Low Fat Cooking Spray
1 Onion, finely chopped
4 Rashers Weight Watchers Unsmoked Back Bacon, chopped
260g (9¼ozs) Arborio Rice
100g (3½ozs) Peas, defrosted
1 Tbsp Fresh Thyme Leaves, chopped
15g (½ozs) Grated Parmesan Cheese


1.     Make 1.2 litre (2 pints) hot vegetable stock and place in a small pan over a low heat.  Mist a pan with low fat cooking spray and add 1 onion, chopped and 4 rashers weight watchers unsmoked back bacon, chopped and fry, stirring for 8 minutes.

2.     Add 260g (9¼ozs) arborio rice and cook, stirring for 1 minute, and then add a ladleful of hot vegetable stock.  Cook, stirring, until its been absorbed.  Repeat until you have used up most of the stock.

3.     Add the last of the stock with 100g (3½ozs) defrosted peas and 1 tbsp fresh thyme leaves.  Cook stirring, until the stock has been absorbed.  Season and stir in 15g (½ozs) parmesan cheese.  Serve immediately with zero pointed vegetables or salad.
