Sunshine Chicken Wrap


Sunshine Chicken Wrap
Serves 4

 

4 Discovery Flour Tortillas or Wrap 'n' Roll (tomato)
12 Skinless/boneless chicken breasts (approx. 100g each)
30g Discovery Cajun Seasoning or Poultry Magic Seasoning
120ml Cream of coconut
60ml Lime juice (fresh/bottled)
220g Mayonnaise
340g Sliced mango (fresh/tinned)
340g Sliced mixed peppers
340g Shredded iceberg lettuce

  1. Season each chicken breast with approx. 3g Poultry Magic ensuring an even coating on both sides.
  2. Shallow fry on high heat for approx. 4 minutes each side until breasts are well sealed and cooked through.
  3. Meanwhile, add coconut cream and lime juice to the mayonnaise and mix well. Wash and thinly slice the lettuce, mixed peppers and mango.
  4. Spread some coconut mayonnaise in the centre of each Discovery New World Tomato Wrap. Place lettuce, peppers and mango in the centre of each Wrap. Slice each cooked chicken breast into medallions and lay these on the vegetables.
  5. Roll the wrap into a cyinder, slice once diagonally across the centre to expose the filling and serve with a salsa dip or chunky guacamole.
