Saffron Chicken

Saffron Chicken

1 chicken breast per person (2½ pt)
1 medium onion
2 cloves garlic
2 tbs olive oil (1pt per person if serving 4)
Lemon
Pinch saffron - failing that use a pinch of turmeric
½ tsp each of cumin, paprika and ginger
1 tbs green olives per person (another 1pt each? not sure)
Fresh coriander

Chop the chicken into largish chunks. Finely chop the onion and garlic. Fry the chicken, onions and garlic gently in the oil until onions are translucent (about 10 min). Then add the spices and the juice and zest of the lemon, along with a glass of water. Simmer for about half an hour then stir in the chopped olives and coriander. Season and serve with couscous. 4½ points per serving and surprisingly creamy-tasting.
