Nectarine & Parma Ham Salad


Nectarine & Parma Ham Salad

3 pts per serving
Serves 1

-handful of mixed salad leaves
-5 asparagus spears (cut into 2-3cm pieces)
-1 nectarine
-10g parmesan cheese (shaved with a hand held cheese grater)
-2 slices parma ham/prosciutto, torn
Dressing
-1tsp wholegrain mustard, 1tsp honey, 1tbs balsamic vinegar (all mixed together).

Chuck the parma ham, parmesan and salad leaves in a serving bowl.
Cook the asparagus for 2mins in boiling water (or in microwave), and add to the serving bowl.
Cut the nectarine into 8 wedges and cook for 2-3mins in a pan until slightly caramelised. Add to the serving bowl.
Drizzle the dressing over the top, season with cracked black pepper and serve.
