Grilled Halloumi salad


Grilled Halloumi salad

Serves 1

Points per serving 6½

Handful of mixed lettuce leaves
1 large orange
½ small red onion, thinly sliced
6 balck or green olives
60g Halloumi cheese, sliced
2 tbsp fat free salad dressing
salt & pepper
chopped fresh herbs to garnish eg mint, chives

Wash lettuce leaves and arrange on a serving plate.

Using a sharp serrated knife, remove all the peel and pith from the orange.  Slice into segments, removing the membrane. Mix with the onion and olives and pile on top of the lettuce.

Preheat a griddle pan or grill.  Cook the Halloumi cheese for about 2-3 mins until it just begins to melt and char.  Transfer the slices to the salad, drizzle with dressing and season to taste.

Serve garnished with the fresh herbs.

Tip: Most supermarkets sell Halloumi but if you can't find it use feta instead, just crumble it over the leaves.  Points per serving would then be 6.

Serve with a warmed pitta bread but add another 2½ pts to the meal.
