Malteser Ice Cream


Malteser Ice Cream

1/2 cup of sugar
1/2 cup of cocoa powder
2 cups of milk
one small tin (405g) of skimmed sweetened condensed milk
2 tsp vanilla essence
10 fl oz of single cream
8 tbsp Horlicks (malted milk powder)
1 box of Maltesers




Put the sugar, cocoa powder (sifted), milk and condensed milk in a saucepan. Heat to the boil, then simmer gently for 5 minutes, stirring ALL the time. Leave to cool (putting the pan in a couple of inches of cold water hastens this and also fast cooling helps bacteria not to multiply fast as they prefer lukewarm temperatures to multiply).
Put some of the liquid in a blender (all if your blender is big enough, but mine wasn't) together with the malted milk powder. Blend briefly to mix in the powder. Mix all the liquid back together in a freezer proof container, adding the cream and vanilla essence. Stir. Then add the Maltesers, and put in the freezer.
When it is half-frozen (approximately 4 hours, but could be sooner or later depending on your freezer), take out the container, beat gently with a fork, and return the container to the freezer. Repeat after another few hours.
Alternatively, you could use an ice-cream maker, but adding the Maltesers after the ice-cream is almost frozen.
