Irish Stout, Apple & Sausage Casserole


Irish Stout, Apple & Sausage Casserole

Serves 4

Points 2½ per serving

1 x 400g pack Bowyers 95% fat free pork sausages
low fat cooking spray
2 medium onions, chopped
1 large leek, sliced
2 medium eating apples, cored, peeled and chopped
300ml Irish Stout eg Murphy's
1 veg stock cube dissolved in 150ml water
1 tsp dried mixed herbs
4 tsp instant gravy granules
salt & pepper

Heat a large non-stick frying pan and add the sausages with a couple of sprays of frylight. Cook gently, turning often until browned.  Add the onions, leek and apples to the pan and cook 3-5 mins, stirring occasionally.

Pour in the stout and stock.  Add the herbs. Simmer for 20-25 mins then stir in the gravy granules to thicken.  Season to taste and serve with mashed potatoes and cooked cabbage, remembering to add the points for the mashed potato.


This recipe is from a very old weight watchers magazine and is really nice. I found that adding 2 tsp of apple sauce made a slightly sweeter sauce.
