extra lean pork mince

(1¼ozs) fresh breadcrumbs

Apple, unpeeled, cored and grated

Tablespoons chopped fresh sage

Teaspoons wholegrain mustard

2x45g
(1½ozs) sheets filo pastry, measuring 50x24cm (20x 9½ inches), defrosted if
frozen

Tablespoon skimmed milk, for brushing
·
Salt
and freshly ground black pepper.
- Preheat
the oven to Gas Mark 6/200c/fan oven 180c.
Spray a non-stick baking tray with the cooking spray.
- Put
the pork mince in a bowl with the garlic, breadcrumbs, apple, sage and
mustard and season well. Stir until
combined.
- Lay
out a sheet of the filo pastry, spray with the cooking spray and then top
with a second sheet of filo pastry then fold them in half crossways. Spoon the pork mixture down the centre
of the filo pastry in a sausage shape.
Fold the filo pastry over the filling and wet the edges with a drop
of water in your fingers to seal then tuck in the ends to make a large
sausage roll shape.
- Place
the filo pastry on the baking tray and brush with the milk. Bake for 40-45 minutes until golden
brown and cooked through.
