DOMINICAN VEG CURRY

Serves 2

100g potato, peeled & cut into large cubes
200g carrots, cut into large cubes
100g cauli florets
100g green beans, sliced
75g peas
250g jar Kerala flavoured Sharwood spice blend
100ml water
Salt & pepper

Cook the potato & carrots for 10 mins in boiling water. Add the cauli & green beans & continue to cook for 5 mins.
Drain and return to the pan with the rest of the ingredients, stir well, bring to the boil, cover & simmer for 5 mins.
