CURRIED TURKEY AND AVOCADO SALAD

Core recipe from WW boards

1 avocado, chopped
12 oz 375g cooked turkey ( or chicken), cut into strips
½ bunch spring onions, chopped
½ red pepper, deseeded and chopped
tub 0% Greek Yogurt
2 tsp lemon juice
1 Tbsp freshly chopped coriander
1 Tbsp (to 2) mild curry powder
1 tsp cumin
1 tsp garam masala
salt and freshly ground black pepper
To Serve: shredded lettuce
To Garnish: fresh coriander

Instructions

Place all the ingredients in a bowl and mix thoroughly.
Arrange the shredded lettuce on a serving plate, spoon over the curried turkey and garnish with the coriander.
