Cucumber Salad

2 Large Cucumbers
1 Red Onion
2 cloves garlic
Red Wine Vinegar
2 tbsps Candarel or other sweetener
Pepper Salt


Very finely slice the 2 cucumbers and onion ( Use a vslicer or mandolin to get it paper thin).  Crush and add the cloves of garlic.  Put in a dish and pour over 1/2 bottle of the red wine vinegar. Now add the candarel and seasoning.  Now add some cold water filling the dish to the top.  IMPORTANT - I suggest you have a taste of the mix, everyone likes it a different way, sweeter, more savoury so have a dip in and see what you want to add if anything. 

Leave for a few hours to marinate, then serve drained with cold meats,  poultry or have it to nibble on
