Chicken Satay Fried Rice
Brown Basmati

20g Peanut Butter (4PP but depends on brand)
Soy Sauce

Mirin Sauce (can be bought at tesco in the ingredients section)

Sesame Oil (1PP per tspn)
1. Cook Basmati rice as per packet instructions. (I used boil in the bag, 1 sachet) leave to cool
2. Season a large chicken breast with salt and pepper and grill (I use George foreman). When ready, shred the chicken with two forks (It is easier to do this when hot)
3. To make the satay mix, add 20g peanut butter, 1 tblspn soy sauce, 1 tblspn water in a bowl and mix well so the peanut butter breaks up. Add in the shredded chicken.
4. Chop garlic, chilli, a few spring onions and half an onion and stirfry using a few sprays of frylight for a few mins
5. Add in the cooled rice and continue to cook stirring often to prevent the rice sticking to the bottom. Add a dash of soy sauce to brown the rice.
6. Add the chicken mixture, stir in well.
7. To finish, drizzle over 1 tsp mirin sauce and 1 tsp sesame oil and add chopped coriander. Mix and Serve
