CHEESE AND TOMATO BAKE

Serves 4

4tsp polyunsaturated margarine
180g white bread, torn into pieces
1 small onion, chopped finely
120g mature Cheddar cheese, grated
2 eggs
¾ pt skimmed milk
2 tomatoes, sliced
salt & pepper

Preheat oven to Gas 5/190'C/375'f.  Grease a 1.2 litre (2pt) baking dish with ½ tsp of the marg.
Put the bread into a blender or food processor and process into breadcrumbs.  Tip into the baking dish.
Heat the remaining marg in a small pan and saute the onion until softened.  Mix with the crumbs and add half the cheese.
Blend or beat together the eggs and milk and season with salt & pepper.  Pour over the crumbmixture.
Arrange the tomato slices on top and sprinkle with remaining cheese.
Bake for 35 mins, until risen & golden brown.
