Avocado and Orange Salad with Tomato and Tarragon Dressing

tablespoon(s) low-fat plain fromage frais
1 medium tomato(s), deseeded and diced
2 teaspoon(s) tarragon, chopped fresh
1/2 teaspoon(s) salt, to taste
1/2 teaspoon(s) pepper, to taste
1 medium orange(s)
1 teaspoon(s) lemon juice
100 g avocado pear
2 portion(s) lettuce, to serve
1 medium tomato(s), deseeded and diced
2 teaspoon(s) tarragon, chopped fresh
1/2 teaspoon(s) salt, to taste
1/2 teaspoon(s) pepper, to taste
1 medium orange(s)
1 teaspoon(s) lemon juice
100 g avocado pear
2 portion(s) lettuce, to serve

In a bowl,
mix together the fromage frais, tomato and tarragon. Season with salt and
pepper and chill whilst preparing the salad.

Peel the
orange, carefully removing all the pith. Segment the orange, over a small
bowl to catch the juice.

Peel, quarter
and slice the avocado. Add the lemon juice to the reserved orange juice and
gently fold in the avocado slices.

Arrange a
few green leaves on each plate and scatter the orange and drained avocado
slices over the top.

Whisk any
remaining fruit juices into the tomato and tarragon dressing and drizzle the
dressing over the salad. Serve at once
