Apricot and pear crumble.

4 1/2 oz no-soak dried apricots, finely chopped
1 lb pears, peeled, cored and sliced
1 tablespoon clear honey
1 3/4 oz fresh wholemeal breadcrumbs
1 oz demerara sugar
1 tablespoon plain flour
1 oz low-fat spread, melted
a pinch of ground nutmeg

1)Put apricots in a sauce-pan with the pear slices and honey. Add 1 tbsp of water and simmer gently, covered, for 5 minutes to soften.
2) Preheat the oven to Gas 4/180 C/350 F). Spoon half the pear mixture into an ovenproof dish.
3) Mix together the breadcrumbs, sugar, flour, spread and nutmeg and scatter half over the pears. Top with the remaining pear mixture and scatter with the last of the crumbs. Bake for 25 minutes and serve warm.
