Christmas Strudel

Christmas Strudel

Serves 8

3 pts per serving

2 Bramley Apples, peeled & cut into small chunks
2 tbsp lemon juice
50g glace cherries, halved
115g mixed dried fruit
25g ground almonds
3 tbsp honey
2 tbsp water
4 sheets filo pastry
1 egg white,lightly beaten
1 tsp icing sugar to dust

Preheat oven to 180ºC/350ºF/Gas 4.

Throw the apples, lemon juice and cherries into a pan, simmer for 5 mins.

Remove pan from heat and stir in dried fruit, almonds, honey and water.

Lay a sheet of pastry on a work surface and brush with egg white.  Repeat with remaining pastry, placing them on top of each other.

Spoon the fruit mixture down the centre of the pastry.  Fold the pastry over, like an envelope, then lift carefully onto a baking sheet covered with baking parchment. Make sure the joins of the pastry are underneath the strudel.  Dust with icing sugar.

Bake 20 mins until golden.

Cut into diagonal slices and serve with ice cream/yogurt/creme fraiche....remembering to count the points for whatever you serve it with.
