VEGGIE POTATO CAKES
Serves 4
Approx. 2 - 2.5 Syns per serving
750g potatoes, cubed
1 small cabbage, shredded
1 large onion, finely chopped
2 red chillies, deseeded and finely chopped
(optional)
2 tsp. olive oil - 4 Syns
300g unsmoked bacon chops or gammon steaks,
all visible fat removed
2 level tbsp. runny honey - 5 Syns
Boil the potatoes until soft.
Meanwhile, cook the cabbage until soft and
spray a frying pan with Frylight and cook the onion until soft.
Drain and mash the potato. Drain the cabbage
and stir into the onion and chillies. Mix in with the mashed potato and season.
When cool enough, shape into 8 potato cakes.
Brush a large non-stick frying pan with the
olive oil and fry the potato cakes for about 5 minutes on each side, until
crisp and golden.
Meanwhile, grill the bacon chops or gammon and
brush with the honey a minute before they are ready.
Lovely served with grilled tomatoes or baked
beans. Can also do the potato cakes with HEX cheese added before shaping.
