PESTO STUFFED CHICKEN BREASTS
Serves 4
3 Syns per serving, if using the Mozzarella as
part of a HEX
125g ball of light Mozzarella, torn into small
pieces
4 tbsp. green pesto - 12 Syns
4 skinless chicken breasts
8 rashers of smoked bacon, all visible fat
removed
8 cherry tomatoes
Pre-heat the oven to 200C/Gas 6.
Cut a slit into the side of each chicken
breast and stuff with the pesto/Mozzarella mixture.
Place two halved cherry tomatoes inside each
breast.
Wrap each chicken breast with two rashers of
the bacon.
Season, spray with Frylight and place on a
baking tray. Roast the chicken for 25 minutes or until the chicken is
thoroughly cooked through.
