EGG AND BACON FRIED RICE

This is a take on a recipe from a cook book called Vatch's
Thai Street Food.

1 clove of garlic, finely chopped
6 rashers of smoked bacon, all fat removed and
cut into strips
1 red pepper, deseeded and finely sliced
4 spring onions, finely sliced
2 eggs, beaten
1 tbsp. fish sauce - Blue Dragon nam pla is

1 tbsp. light, salt-reduced soy sauce
Half tsp. sweetener
225g cooled, cooked Jasmine or Basmati rice
Spray a wok or large frying pan with Frylight
and fry the bacon and garlic, over quite a high heat, until the bacon begins to
turn golden.
Add the spring onions, red pepper, fish sauce,
soy sauce and sweetener and cook for one minute.
Add the cooked rice. Stir-fry for two minutes,
then make a well in the middle of the mixture and tip in the lightly beaten
eggs. Make channels in the rice for the egg to flow along, as this will help it
to cook.
Once the egg has set, give the mixture a
couple of stirs and then turn off the heat.
Let it sit for a minute, allowing the flavours
to infuse, before serving on warm plates.
