CHEESY
BAKED SALMON
Serves 4
Syn Free, if using the cheese as a HEX
900g salmon fillets
2 cloves of garlic, crushed
1 tsp. dried dill
120g grated Cheddar cheese
6 spring onions, finely sliced
Pre-heat the oven to 230C/Gas 8.
Place the salmon fillets on a large piece of
foil and season with the garlic, dill and some salt and pepper to taste. Seal
the foil around the fish and place on a baking tray.
Bake for 20 minutes. After this time, remove
from the oven and top with the grated cheese and spring onions (I sometimes add
some thinly sliced tomato at this stage, too), and continue to bake for a
further 5 minutes, or until the cheese is melted and the fish flakes easily.
Gorgeous with new potatoes and peas/salad.
