Spicy sausage and butter bean casserole

Calories per serving 305.

serves 4.

450 g (1 lb) low fat pork sausages
400 g can of chopped tomatoes
2 tablespoons tomato puree
300 ml (10 fl oz) pork stock
1 tablespoon Worcestershire sauce
225 g (8 oz) button mushrooms, halved
225 g (8 oz) baby onions, halved
1 green pepper, de-seeded and diced
1 teaspoon chilli sauce
410 g can of butter beans, rinsed and drained
salt and freshly ground black pepper
1 tablespoon chopped fresh flat leaf parsley, to serve

1. Grill the sausages under a medium heat for 10 minutes, turning frequently until they are evenly browned.

2. Meanwhile, place the chopped tomatoes, tomato puree, stock and Worcestershire sauce in a flameproof casserole dish and bring to the boil.

3. Stir in the mushrooms, onions, pepper and chilli sauce, and simmer for 10 minutes.

4. Add the grilled sausages and butter beans to the sauce, and season to taste.

5. Simmer for a further 20 minutes.

6. Sprinkle with chopped parsley and serve.
