Spanish Cod


Spanish Cod

Points = 3

4 cod fillets
250mls white wine
250mls veg stock
1 jar of pimentos
150g sundried tomatoes
2 teaspoons of dijon mustard
2 teaspoons of whole grain mustard

1. Poach the cod in the wine and stock for about 12-15 mins or untill cooked.
2. Remove cod and keep warm.
3. Reduce stock by 50% to thicken.
4. All the rest of the ingredrients and heat through for about 5 mins.
5. Pour over cod and serve!
