QUORN™ THAI GREEN CURRY


QUORN™ THAI GREEN CURRY 

Serves 2.Calories per serving: 280

15ml (1tbsp) vegetable oil
200g pack Quorn™ Thai pieces
4 spring onions roughly chopped
1 stick lemon grass roughly chopped into thirds
2 garlic cloves crushed
30ml (2tbsp) coconut cream
300ml vegetable stock
2 kaffir lime leaves
salt and freshly ground pepper
Thai fragrant rice to serve


Heat the oil in a wok or large heavy-based saucepan. Add the Quorn™ Thai pieces and cook for 2 - 3 minutes or until golden in colour. Meanwhile, add the spring onions, lemon grass, garlic, coconut cream, vegetable stock and kaffir lime leaves to the wok. Season well. Bring to the boil, reduce the heat and simmer for 5 minutes.
Serve immediately with Thai fragrant rice.
