1)Half a can
of Sainsbury's Be Good to Yourself Coconut Milk
2) Variety of vegetables
3) 1 desert spoon of green curry paste
4) 1 medium pack of pre-cooked prawns
1) Chop up a variety of
vegetables like peppers, aubergine, baby sweetcorn, onions, courgette etc, then
bake for 20 mins2) Variety of vegetables

2) Just before the vegetables are ready, heat up the coconut milk and green curry paste in a saucepan until nearly boiling
3) Once the vegetables are cooked, add them to the coconut milk and green curry paste and simmer for 5 mins
4) add the prawns for about a further minute
5) serve with some boiled rice (remembering to add the extra points)
This is a really quick and delicious recipe (I usually oven cook a big batch of veggies and keep some aside in the fridge to make this recipe even quicker - no more than 10 mins). The points depend on how many prawns you use and for a hotter dish you may want to add some more green curry paste (this is hot enough for me).
