Pie

Peel potatoes and cut into chunks. 100g = 1 point I used 900g
Put in a pan with water and a teaspoonful of veg stock powder and bring to the
boil.
Cook until soft enough to mash.
Drain them leaving a bit of liquid to mash them in - mustn't be too wet.
Meanwhile fry a large chopped onion in a tablespoon of olive oil until softened
and staring to brown - 3 points (you can use oil spray and save these points)
Chop enough mint leaves to produce 2 tablespoons.
Add onion and mint to mashed potatoes and use masher to mix it all together.
Add a good grind of black pepper and salt if wanted - I don't as there is
plenty in the veg stock powder I use.
Lightly oil a 24 cms flat pizza type plate or mark a circle on a baking tray.
Put potato mixture on plate or baking tray and level top.
Put in oven on 200c Gas 6 for 25 minutes - top should be browning.
Cut into wedges and serve hot with anything or cold for lunch boxes etc.
12 points for the whole thing with 3 oil points - it made 8 decent wedges at 1½
points each.
