O point tomato & red pepper soup


O point tomato & red pepper soup

Proportions can vary - I never really measure mine just stick in what I've got:

1 x Onion
1 x Clove of Garlic
1 x Red Pepper
3 x Celery Stalks
1 x tin of Chopped Tomatoes
Some Tomato puree
Some Worcestershire Sauce
Some Chilli Powder
Some Basil
Maybe a Bay Leaf.
Salt and Pepper.

Fry the onions and garlic (I actually use a small amount of Olive Oil but you could use the Fry Light stuff to make it completely point-free.)
Fry the pepper and celery.
Add the Chopped Tomatoes and all the herbs.
Simmer for a while.
Remove the bay leaf... I think.
Blend.
