Mexican Stir Fry


Mexican Stir Fry

1 tablespoon extra virgin olive oil
1 red onion,sliced
2 cloves of garlic, crushed
1 red pepper, de-seeded and chopped
1 yellow pepper, de-seeded and chopped
1 green pepper, de-seeded and chopped
1 teaspoon cayenne pepper
2 teaspoons cumin seeds
2 courgettes, chopped
3 tomatoes, roughly chopped
150g (5oz) baby sweetcorn, halved
2 tablespoons chopped fresh coriander leaves
salt and fresh black pepper

Heat the oil in wok or frying pan and fry the onion, garlic and peppers for 3-4 minutes.
Then add the cayenne and cumin and cook foe 2 minutes.
Add courgettes, tomatoes and sweetcorn and cook for another 5-7 minutes. Stir in the corinader and seasoning and pile into a large serving dish.

This can be served with Tortillas if you want a treat, but they are high in sins, 3.5 per 28g! I have it with rice or couscous which make it
free + 1 'b' choice or a total of 6 sins.
