Crunchy
pork chops with glazed apple rings

Still a family favourite, and adaptable, too, for
lamb, chicken or turkey breasts. Serve with traditional gravy and vegetables.

4 medium pork loin chop, trimmed

1 medium egg(s), beaten
|

75 g stuffing mix, dried sage and onion stuffing
mix
|

1 medium apple(s)
|
|
3 teaspoon lemon juice
|
|
2 teaspoon honey, (clear)

Preheat the oven to Gas Mark 6/200°C/400°F. Dip the
chops first in the beaten egg, shaking off any excess and then in the stuffing
mix, so that each chop is evenly coated.

Place in a shallow dish and cook for 40 minutes,
until the chops are tender and the coating crisp.

Meanwhile, cut the apple into 4 rings. Remove the
core. Brush each side with the lemon juice. Arrange one ring on each chop,
glaze with the honey and cook for the last 10 minutes, with the pork. Serve
immediately.
