Country Cottage Pie

300g (10 ½ ozs) sweet potatoes, cut into chunks
2 carrots, cut into chunks
1 cauliflower, broken into florets
400g (14oz) extra lean minced beef
1 onion, finely chopped
1 courgette, finely chopped
100g (3 ½ ozs) fine green beans
100g (3 ½ ozs) button mushrooms, sliced
1 teaspoon dried mixed herbs
4 teaspoons gravy granules for beef
salt & fresh ground black pepper

Cook the sweet potatoes, carrots and cauliflower
in a large saucepan of boiling water until tender – about 20 minutes

Meanwhile, heat a large lidded saucepan and add
the minced beef, a handful at a time, cooking over a high heat until seared and
browned

Add the onion, courgette, green beans, mushrooms
and mixed herbs to the minced beef. Add 400 ml (14 fl oz) of water and bring up
to the boil. Simmer, partially covered, for 20 minutes

Preheat the grill and warm a large baking dish
under it for 1-2 minutes. Meanwhile, drain and mash the sweet potatoes, carrot
and cauliflower, seasoning with black pepper

Sprinkle the gravy into the mince mixture,
stirring until thickened. Season if needed, then tip the mixture into the
baking dish. Spoon the mash on top, spreading it out to cover the mince. Grill
until lightly browned, then serve
