Carrot & orange soup
700g carrots
2 medium oranges
1 medium onion
Frylight
Coriander seeds/fresh coriander
Vegetable stock cube
Chop carrots & onion & place in roasting tray.
Zest the oranges, add some to the carrots & onions, and
spray with frylight.
Juice the oranges, save the juice, and add some of the
peeled fruit to the roasting tray.
Roast at 180 (I have a fan oven) for about 25 min or until
the carrots are soft & slightly brown.
Place the carrots & onions into a pan, sprinkle the
stock cube over them, add 1tsp coriander seeds &/or a few coriander leaves,
and the orange juice.
Cover with water & bring to the boil, then simmer for
about 5-10mins.
Blend with a hand blender, add more boiling water if
necessary.
Makes 3-4 servings depending how thick you like the texture.
