Italian Chicken

Italian Chicken

Serves 4

Points: 2 pts per serving

2 tsp olive oil
1 large (or 2 small) onion, chopped
2 stalks celery, chopped
1 carrot (or 5 baby carrots), chopped
450g boneless, skinless chicken breast meat cut into strips
1 tsp minced garlic
400g tin chopped tomatoes
1 tsp basil


In a pan over medium-high heat, saute vegetables in 2 tsp olive oil for 5 to 10 
minutes, until tender. Add chicken and garlic, stir occasionally, cooking until chicken turns opaque. Stir in basil and tomatoes. When mixture starts to bubble again, reduce heat to simmer and let simmer for at least 10 minutes.
