Honey-Roasted Chicken and Butternut
Squash

1 medium butternut squash
2 sliced chicken breasts
2 tablespoons clear honey
Balsamic Vinegar
4 cloves garlic
2 tablespoons oil
Flat leaf parsley
low-fat cooking spray

Heat oil in a pan and fry your chicken for 2-3 mins.
Slice butternut squash into wedges.
Remove chicken from pan and pour oil into pre-heated baking
tray.
Add chicken, butternut squash and garlic cloves to baking
tray and spray some low-fat cooking spray over the contents.
Put in pre-heated oven 200 degrees for 10 mins.
Mix together the honey and balsamic vinegar.
Remove baking tray and spoon over honey/vinegar mixture as
well as basting chicken/squash with oil.
Return to oven for 25 mins - basting twice again throughout
this time.
Remove tray, sprinkle some chopped parsley over and serve with vegetables of choice.
