White Chocolate Chip Brownies

Serves 12

low fat cooking spray
175g self raising flour
40g cocoa powder
salt
100g light muscovado sugar
1 egg beaten
1 tsp vanilla extract
100g low fat plain yogurt
80g low fat polyunsaturared magarine, melted
25g white choc chips

Preheat the oven gas mark 4/180oC/fan oven 16oC

Lightly grease a 20cm (8inch) square cake tin with low fat cooking spray and line it with baking parchment. Sift the flour, cocoa powder and a pinch of salt into a mixing bowl and stir in the sugar.

Whisk the egg, vanilla and yogurt together with 150ml (5floz) cold water. Pour into the dry ingredients, add the melted magarine and mix well until smooth.

Stir in the chocolate chips, then pour the batter into the lined tin.

Bake the brownies for 20mins until they are set and the top is lightly cracked. The brownies should still be slightly sticky in the centre.

Cool in the tin and cut into 12 pieces. Store in an airtight container.
