Fruit Drop Scones
Makes 8-10
100g Self Raising Flour
25g Caster Sugar
1 medium egg
½ tsp baking powder
12g sultanas
100ml semi skimmed milk
pinch cinnamon or mixed spice
Sieve the flour, sugar, spices and baking powder into a
bowl. Make a well and crack in the egg. With a fork, start to draw
in the flour mixture and mix gently until combined. Then start adding the
milk until the consistency is that of thick double cream.
Heat a heavy non stick frying pan and spray with a little
spraylight or a drop or two of sunflower oil. When the pan is hot, drop
two tablespoons of the mixture into the centre of the pan. Reduce the
heat slightly if pancakes start to brown too quickly. Then put 4 or 5 sultanas
on top of the mixture. When bubbles start to appear, flip the pancake and
cook on the other side until dark golden brown. Repeat until all
the mixture and sultanas are used up.
Serve hot with maple syrup (0.5 points per teaspoon)
