Peppermint Creams

Peppermint Creams

Makes 24

Points per serving: ½
Points per recipe: 12  (original points)

200g icing sugar, sifted
few drops lemon juice
10ml egg white
green food colouring
peppermint flavouring

Put icing sugar in a bowl.

Add a few drops of lemon juice, and egg white and mix to form a soft dough.

Add a few drops each of green colour and peppermint flavour and mix well.

Dust surface with icing sugar and roll out to ¼ (0.5cm) thick.  Cut into rounds with a cutter or shape into 24 balls and flatten each slightly.


Leave to chill in the fridge overnight to dry.
