Vegetable Chowder: Pressure cooker

Serves 4

Core recipe
Points 2 per serving

2 tbsp olive oil (or use frylight to save points)
large pinch paprika
2 carrots, peeled & sliced
2 parsnips, peeled & sliced
½ white cabbage, shredded
3 leeks sliced
1 cauliflower in florets
300ml chicken stock
300ml tomato juice
salt & pepper

Remove trivet.  Heat oil and paprika, add veg.  Pour in stock and tomato juice and season.  Cover, bring to pressure and cook 4-5 mins.

Check seasoning & serve.
