Three Tomato Soup

Three Tomato Soup

Serves 4

Both Plans: 5½ pts the full recipe (original points)
1½ pts per serving

100g cherry tomatoes
1 tbsp olive oil
2 x 400g cans chopped tomatoes
2 tbsp sun-dried tomato paste
2 tbsp balsamic vinegar
275ml veg stock
1 tbsp sugar

Cook the cherry tomatoes in the oil for 2-3 mins until they start to burst. Add the chopped tomatoes, and tomato paste and stir through. Add vinegar, veg stock and sugar. Simmer for 30 mins.

Whiz in a blender and return to the pan. Season well and serve garnished with fresh basil leaves.

Note:

Reduce the points by using frylight instead of olive oil. (Makes it 1pt per serving)
