Steamed Thai Haddock

Core recipe
Simmer 100g brown rice in fish stock for 10 mins.
Place 2 x 140g haddock fillets onto a plate and sprinkle with 2cm fresh ginger,
chopped, ½ deseeded red chilli, chopped and 2cm centre part of a stick of lemon
grass chopped plus the zest of 1 lemon.
Put the plate with the fish on into the steamer, add 40g
broccoli florets to the rice and place steamer over the rice. Cover and
steam for 6-8 mins.
Drain rice and broccoli and stir in 2 tsp soy sauce, 1
finely sliced spring onion and 2 tbsp chopped fresh coriander. Serve.
