Thai Style Steamed Fish with Lime
Serves 1
1 fillet of haddock
1 red pepper
1 carrot
bunch or spring onions
Juice and rind of 4 small limes - or 2 large
coriander leaf about 3 tablespoons chopped volume
1 red chilli
2 cloves of garlic
1 teaspoon soy sauce
1 teaspoon cornflower

1 teaspoon cornflower
Make a paste in the blender with the rind and juice from
half the limes, the garlic, half the spring onions, the soy sauce and chilli.
Chop vegetables finely.
Place the vegetables in the steamer with fish on top, spread
the paste on top of the fish and steam until cooked.
Put the remaining lime rind and juice in a saucepan with 3
teaspoons of sugar and heat until sugar is dissolved, add the cornflower mixed
with a little cold water, to thicken.
Serve the fish and vegetables (including any cooking juices)
on rice or rice noodles and pour the lime sauce over the top.
