Italian Baked Fish

Adapted from a Delia recipe to make it ww friendly - and cheap!

Saute 1 small chopped onion and 1 crushed clove garlic in 1tsp olive oil OR frying spray until soft. Add 1 can chopped tomatoes, 1tsp tomato puree, a sprinkling of dried Italian herbs (e.g. basil, oregano) and some ground black pepper. Simmer, uncovered, for 20 minutes. Then add 200g sliced mushrooms, stir and simmer for a further 10 minutes. The aim is to produce a thick sauce.
Place 4 frozen white haddock pieces in a baking dish. Top each piece with 1/4 of the sauce and finish off with a few pitted, halved black olives if desired.
Cover the dish with foil and bake at 200 degrees C for 25-30 minutes until the fish is cooked through.
Serve with potatoes or rice and a green vegetable.

Tip: Leftover sauce freezes well.
