Squash Soup
Serves 4

low fat spray
1kg pumpkin or squash, cut into chunks
100g potato, sliced
1 medium leek, sliced
3 cloves garlic, crushed
1 tbsp grated ginger
1.5 litres veg stock.
salt and pepper
Mist a pan with spray and add squash, potato, leek, garlic
and ginger. Cook stirring occasionally for about 10 mins.
Pour in the stock and bring to the boil. Cover and
simmer for 20-25 mins until veg are tender.
Season to taste and serve.
Tip: Blend for a smooth soup if you like.

2 small onions

2tsp cumin seeds
2tsp dried rosemary

Peel and chop all veg small. Soften onion in a
large pan with spray oil, and with cumin and rosemary. Add other veg and 'fry'
for a few minutes. Add stock cube and stir till melted. Pour over enough
boiling water to cover contents of pan and simmer for 20-30 minutes until veg
are really tender. Allow to cool and puree in a blender till smooth. Season to
taste, and dilute to the required consistency before serving hot.
It's really nice with a little bit of greek yoghurt
stirred in, or cheddar cheese melted over, but remember to count the points!
