Carrot & Cumin Soup

Carrot & Cumin Soup

Serves 4

low fat cooking spray
onion, chopped
3 celery sticks, chopped
3 large carrots, chopped
tsp cumin seeds or ground cumin
850ml stock
2 tbsp tomato puree
 few sprigs fresh parsley
4 tbsp low fat natural yogurt
salt & pepper


Saute the onion, celery and carrots for 2-3 mins in the low fat spray.  Add cumin, stock, tomato puree and parsley.  Bring to the boil, reduce heat and simmer for 20-25 mins until veg are tender.  Blend the soup until smooth , add the yogurt, stir well, season to taste and serve.
