Minestrone Meal

Minestrone Meal

Serves 4

Points plan 1½ pts per serving (original points)
Core recipe

1 tbsp olive oil
1 onion, chopped
½ small swede or 1 large turnip, chopped
1 medium parsnip, chopped
1 carrot, chopped
1 courgette, chopped
1 x 400g can chopped tomatoes
600ml veg stock
2 tsp italian mixed dried herbs
60g quick cook, macaroni
30g cabbage or spinach, shredded
salt & pepper

Heat the oil in a large pan and add the onion, swede or turnip, carrot, parsnip and courgette.  Saute for a few minutes, taking care not to brown the veg.

Add the tomatoes, stock and herbs.  Bring to the boil, simmer gently for 20 mins until the veg are tender.


Add teh macaroni and cook for about 5 mins until the macaroni is tender.  Add the cabbage or spinach and cook for 2 mins.  Taste and adjust the seasoning.  Serve.
