Lentil & Apple Soup

Lentil & Apple Soup

Serves 4

Points plan 2½ pts per serving (original points)

Core recipe

400g cooking apples, peeled, cored and diced
4 sticks celery, chopped
2 large onions, peeled and chopped
2 large carrots, peeled and chopped
200g red lentils
1-2 tsp curry powder
2 tsp tomato puree
1½ litres veg stock

Put apples and veg into a large pan.  Wash and drain lentils and add to pan. Add curry powder, tomato puree and stock and mix well.

Bring to the boil and simmer gently for approx 1 hour until lentils are soft.

Puree or blend the soup.  Serve hot.
