Armenian Soup

Armenian Soup

Serves 4

Core: ½ pt the whole recipe
Points plan: 1 pt per serving

30g dry red lentils
30g dried apricots, chopped
300g potato, peeled and chopped
1 litre veg stock
juice of half a lemon
1 tps ground cumin
3 tbsp chopped fresh parsley

Put lentils and apricots into a large pan.  Add remaining ingredients. Bring to the boil, cover and simmer for 30 mins.
Blend until smooth and serve.
