Bacon & Pea Soup

Bacon & Pea Soup

Serves 4

Core recipe
Points Plan: 4 pts per serving (original points)

5 rashers lean back bacon, chopped
1 garlic clove, chopped
200g dried peas, soaked overnight
1 litre veg stock
1 tsp mint
seasoning

Dry fry the bacon until crisp, remove from the pan.  Add garlic and cook gently for 1 min.  Add drained peas, stock and mint, bring to theboil and simmer for approx 1 hour until peas are tender.


Puree/blend, return to pan, reheat and serve sprinkled with the bacon pieces.
