Curried Parsnip and Apple Soup

Curried Parsnip and Apple Soup 

Serves 4

Points per recipe = 6 (FC)
Points per serving = 1 1/2 (FC)

2 med onions, chopped
2 cloves of garlic, chopped
2 tsp curry powder
500 g young parsnips
850 ml water
3 veg stock cubes
salt n pepper
1 cooking apple
canned spray oil

Spray a large pan with spray oil, place over the heat and add the onion, cooking until soft(about 5 mins). Add the garlic and curry powder. Stir and cook for a couple of mins, then add the parsnips and stockcubes dissolved in the water. Cover the pan and simmer for 30 mins.

Remove from the heat and blend or process until smooth. Peel, core and grate the cooking apple.

Reheat the soup and add the grated apple. Simmer for 3 mins then serve hot
