Winter Warming Soup

Winter Warming Soup

Serves 4

Points per recipe = 9 (FC)
Points per serving = 2 (FC)

1 large carrot, diced
200g of potato, peeled and diced
1 med onion, diced
100g brown lentils
1.5 litres water or veg stock
50g dried skimmed milk powder
Pepper

1.Put the carrot, onion, and lentils into a thick bottomed pan with the water or stock. Bring to the boil slowly and simmer gently for about 2 hours.
2. Place all the ingredients including the milk into a blender and blend until the soup is the consistency you like.

3. Return to the pan, season with freshly milled pepper and serve piping hot.
