Bean and Mushroom Soup

Bean and Mushroom Soup

Serves 4
Points per recipe = 4 (FC)
Points per serving = 1(FC)

450ml veg stock, made with a veg stock cube
440g can of butter beans, drained
125g mushrooms, chopped
1/2 pint skimmed milk
salt n pepper

Pour the veg stock into a food processor, add the butter beans and blend until smooth.


Pour the butter bean mixture into a pan and add the mushrooms. Bring to boil and simmer for a minute, add the milk and reheat. Season with salt, pepper and nutmeg and serve.
