Carrot and Lemon Soup

Carrot and Lemon Soup

450g carrots, sliced
2 med onions,chopped
2 cloves garlic,crushed
1 litre hot water
2 veg stock cubes
grated rind and juice of 1 lemon
salt and pepper

Place  the carrots, onions, garlic, water and stock cubes into a pan. bring to the boil and simmer for 25 mins until veggies are soft.

Remove from the heat, and blend or process until smooth.


Return to the pan, stir in the lemon juice and lemon rind, add salt and pepper to taste and reheat for a couple of mins. Serve in warm bowls.
